Current Pinterest tested recipes!

Egg and Ham Cups!
This was so easy and quick.

Preheat oven to 350.  You'll need thin sliced ham (I used round honey baked lunch ham); eggs; cheese; pepper and salt and cooking spray.

Spray the muffin tin with your cooking spray.
Place the ham slices in each muffing cup.
Crack your egg over the ham slices.
Salt and pepper to taste.

Bake for 12 to 18 minutes at 350.  Mine took about 14 minutes to be done.  Cover with your favorite cheese (I used a really sharp cheddar and Swiss) and bake until the cheese is melted.


Lemon Baked Shrimp

Preheat oven to 350
Peeled deveined shrimp
3 lemons
Mushrooms
Yellow and Orange Bell Peppers
Salt and Pepper
1 stick of butter

Slice all three lemons.  Place the slices from of the 2 of the lemons in the bottom of the pan.  melt your stick of butter and pour over the lemon slices.

Mix your shrimp; vegetables;and seasonings together and add to the top of the butter and lemons.  Take the slices from the last lemon and squeeze over the shrimp mixture and then add the squeezed lemon slices to the top.

Bake 15 to 20 minutes.

I served over pasta but it goes well with rice as well!


Fresh Garden Salad!

This speaks for itself really but I'll list the ingredients anyway:

Romaine lettuce
Iceberg lettuce
Mushrooms
Red Bell Peppers
Squash
Zucchini
Tomatoes
Cabbage
Carrots

I then tossed in some Sesame Seeds and a little bit of Orange Asian dressing!

I don't like Vegi's at all but I even ate a little bit of this!


Oh My Gosh Chicken

I used boneless chicken breasts
1/2 cup sour cream
1/4 cup Parmesan cheese
Pepper - no salt!

Mix the sour cream; Parmesan cheese and pepper together.
Place Chicken in the pan and spread the sour cream mixture over the top of the chicken.
Bake at 350 for 20 to 30 minutes.

This chicken came out so tender and juicy!  I'll make this over and over!


Smothered Pork Chops

Pork Chops - bone in or bone out
1/2 stick of butter
Pepper & Salt
can of Cream of Mushroom soup
1/2 cup of sour cream
1/4 water
sliced mushrooms

Brown the pork chops which have been seasoned to your taste (I hate telling people what seasoning to use on most stuff - everyone likes something different).  Take out the pork chops and add the butter; can of mushroom soup and 1/2 cup of sour cream and 1/4 cup of water to your pan with the drippings.  Mix well.  Add the pork chops back in and simmer until the pork is cooked all the way through.  I then sauteed the mushrooms and added them with the juices to the top.

Served over rice or with mashed potatoes.

I have become a Pinterest junkie!  In 3 weeks time I have a zillion pins!  I've started cooking recipes I've found on Pinterest and love making new things.  We have had guests or kids gone the last two weeks so I haven't been able to do it every day but I'm trying.  So bear with me as I put up new recipes and wax and wane on how well they worked or how horrible they were!

Hi Again!

I haven't visited my blog in awhile.  Really haven't had much to say and was really intimidated by other blogs I see on the internet.  That said so much has happened in the last year. Patrick got a girl friend and a job coaching soccer and did great in his college soccer season;  Kaitie and Kimmie went off to college; Kaitie didn't start her first game of the season but scored in the first 20 seconds on the field when coach put her in and after that she never came out; Alycia Marie did excellent in school and started driving and Paul made a travelling drum line out of Austin and spent his entire spring travelling all over the state as well as to Ohio to perform with them.  I went back to work for awhile and loved the work but my boss was something else.  It was a job that boosted my ego and tore it down.  I did great; the clients loved me and I loved the work (Elder Law) but my boss was very neurotic and also very jealous.  It just wasn't a great fit.  I've tried finding another job but to no avail...which might be a good thing.  The kids are home for the summer and some days that is great and others its hard to handle.  I'm not sure where I'm going right now but we are working on that...

So I've started the Blog again, in the hopes of putting my life in some sort of order....I'm scattered all over and not sure what direction I'm moving in but I know eventually I'll get there.

Pat and I celebrated out 21st wedding anniversary this year and all I can say is all of the heartaches and fights and pain was worth it to get to this point....

So here begins another journey....lets see how I keep up on this one!
