Political knowledge - not so sure that is a good thing!

Whether by choice or by design, I am fairly naive when it comes to politics and history.  I have been content the last 30 some odd years to wonder around life not really caring unless it directly affected me.  I don't remember politics being discussed in my home growing up.  I'm sure they were.  My father was a history buff and watched the news and read the paper religiously.  My mother has educated herself on politics and is very knowledgeable and intelligent on these matters.  I just don't remember it.  It is funny, I do remember being in Elementary school riding the bus home and someone saying "if Reagan wins the election he is going to force everyone who rides motorcycles to wear a helmet".  I remember repeating this at home and my parents laughing but that is the extent of it.  (As a side note you must remember that at that time helmets were not required and seat belts while riding in a car were not either so such a claim was just horrifying).  

Today, politics is a topic of conversation in my house on a daily basis and has been for a long time.  Admittedly, I didn't get involved in the conversations unless it was a topic I was really familiar with such as Women's rights.  Budget deficit and other topics of that nature were of no interest to me.  I was too busy trying to raise of family of five kids on limited income.  My husband, I think, did a wonderful job of challenging our children.  He firmly believes that they shouldn't believe what we do just because, they need to defend their position in an intelligent manner.  So to participate in the political discussions they had better know that of which they speak or stay silent.  I usually stayed silent.  

Don't get me wrong, I'm not uneducated.  I am not social inept.  I am fairly intelligent and I am the first to investigate those pesky claims on facebook with Snopes or FactChecker.  I just really had no interest in the political arena and how it affected my daily life, well that is until about five years ago.  Oh don't get me wrong, when our savings was demolished by the stock market crash the year before our oldest was to leave for college I certainly cared and was willing to place blame.  Every single time I had to pay $4.00 or more for a gallon of milk I was willing to place blame. However, I really was only interested in how it all directly affected me and not how it affected everyone else or how it affect the "whole".  I'd research and read about the reason for the price increase but that was the extent of it.  I would then shrug and move on and fork over my $4.00 four or five times a week like it was the HEB cashiers fault.  It was just easier.  However, recently something changed and after this year, I sort of wish I had stayed with that philosophy I'd be chewing a lot less tums and Tylenol if I had.  

Today's political climate; the information technology of news 24/7; my lack of kids at home and a job outside of the home and the outright lies used by polticial candidates has made it hard for me to not get involved and voice my opinion.  Right or wrong my naive status is gone and as much as I want it back it won't do any good.  Now I just have to find the balance between giving myself a stroke and putting my new found knowledge and political interest to use.  How to do that though I'm not sure.  Right now I just yell at the TV but I'm hoping I evolve out of that mode sometime soon.

Current Pinterest tested recipes!

Egg and Ham Cups!
This was so easy and quick.

Preheat oven to 350.  You'll need thin sliced ham (I used round honey baked lunch ham); eggs; cheese; pepper and salt and cooking spray.

Spray the muffin tin with your cooking spray.
Place the ham slices in each muffing cup.
Crack your egg over the ham slices.
Salt and pepper to taste.

Bake for 12 to 18 minutes at 350.  Mine took about 14 minutes to be done.  Cover with your favorite cheese (I used a really sharp cheddar and Swiss) and bake until the cheese is melted.


Lemon Baked Shrimp

Preheat oven to 350
Peeled deveined shrimp
3 lemons
Mushrooms
Yellow and Orange Bell Peppers
Salt and Pepper
1 stick of butter

Slice all three lemons.  Place the slices from of the 2 of the lemons in the bottom of the pan.  melt your stick of butter and pour over the lemon slices.

Mix your shrimp; vegetables;and seasonings together and add to the top of the butter and lemons.  Take the slices from the last lemon and squeeze over the shrimp mixture and then add the squeezed lemon slices to the top.

Bake 15 to 20 minutes.

I served over pasta but it goes well with rice as well!


Fresh Garden Salad!

This speaks for itself really but I'll list the ingredients anyway:

Romaine lettuce
Iceberg lettuce
Mushrooms
Red Bell Peppers
Squash
Zucchini
Tomatoes
Cabbage
Carrots

I then tossed in some Sesame Seeds and a little bit of Orange Asian dressing!

I don't like Vegi's at all but I even ate a little bit of this!


Oh My Gosh Chicken

I used boneless chicken breasts
1/2 cup sour cream
1/4 cup Parmesan cheese
Pepper - no salt!

Mix the sour cream; Parmesan cheese and pepper together.
Place Chicken in the pan and spread the sour cream mixture over the top of the chicken.
Bake at 350 for 20 to 30 minutes.

This chicken came out so tender and juicy!  I'll make this over and over!


Smothered Pork Chops

Pork Chops - bone in or bone out
1/2 stick of butter
Pepper & Salt
can of Cream of Mushroom soup
1/2 cup of sour cream
1/4 water
sliced mushrooms

Brown the pork chops which have been seasoned to your taste (I hate telling people what seasoning to use on most stuff - everyone likes something different).  Take out the pork chops and add the butter; can of mushroom soup and 1/2 cup of sour cream and 1/4 cup of water to your pan with the drippings.  Mix well.  Add the pork chops back in and simmer until the pork is cooked all the way through.  I then sauteed the mushrooms and added them with the juices to the top.

Served over rice or with mashed potatoes.

I have become a Pinterest junkie!  In 3 weeks time I have a zillion pins!  I've started cooking recipes I've found on Pinterest and love making new things.  We have had guests or kids gone the last two weeks so I haven't been able to do it every day but I'm trying.  So bear with me as I put up new recipes and wax and wane on how well they worked or how horrible they were!

Hi Again!

I haven't visited my blog in awhile.  Really haven't had much to say and was really intimidated by other blogs I see on the internet.  That said so much has happened in the last year. Patrick got a girl friend and a job coaching soccer and did great in his college soccer season;  Kaitie and Kimmie went off to college; Kaitie didn't start her first game of the season but scored in the first 20 seconds on the field when coach put her in and after that she never came out; Alycia Marie did excellent in school and started driving and Paul made a travelling drum line out of Austin and spent his entire spring travelling all over the state as well as to Ohio to perform with them.  I went back to work for awhile and loved the work but my boss was something else.  It was a job that boosted my ego and tore it down.  I did great; the clients loved me and I loved the work (Elder Law) but my boss was very neurotic and also very jealous.  It just wasn't a great fit.  I've tried finding another job but to no avail...which might be a good thing.  The kids are home for the summer and some days that is great and others its hard to handle.  I'm not sure where I'm going right now but we are working on that...

So I've started the Blog again, in the hopes of putting my life in some sort of order....I'm scattered all over and not sure what direction I'm moving in but I know eventually I'll get there.

Pat and I celebrated out 21st wedding anniversary this year and all I can say is all of the heartaches and fights and pain was worth it to get to this point....

So here begins another journey....lets see how I keep up on this one!
